Easy 2-Night Camping Meal Plan

Here's a simple meal plan for a quick 2 night escape. All you need for cooking is a propane stove (we love our Jet Boil) and a pan. Only one meal requires prep in your own kitchen. Everything is heat 'n' eat or made by boiling water.


Dinners:
Dinner 1: Bean and Cheese burritos
Homemade refried beans
Tortillas
Mexican blend shredded cheese
Chips (we like multigrain)
Avocado
Homemade refried beans: Pour a couple tablespoons of olive oil in a frying pan on medium heat. When warm, add 2 cloves of fresh garlic, turning to brown each side. Once browned, smash the garlic clove with a fork. Pour in two cans pinto beans, about 1 tsp cumin, 2 tsp paprika, plus some chili powder, salt and pepper. Stir and cook until warm. Mash to desired consistency. Put into Tupperware and chill in fridge until it's time to pack!

Dinner 2
Auntie Annie's mac n cheese
Roasted red pepper soup (or your favorite boxed/canned soup)
Mini bell peppers
Breakfasts: 
Oatmeal
Instant oatmeal
Fresh raspberries
Freeze dried fruit
Brown sugar

Snacks: 
Nuts - my favorite is Trader Joe's Trek Mix
Dried mango
Cliff bars

Lunches: 
Hummus
Carrots
Nan
Salami (for those who like a little animal protein)
Apples

Emergency/extras: 
Mashed potatoes in a box
An orange
Bread
Almond butter


Drinks: 
Tea
Hot chocolate

Meal with a view! I promise he likes it... and me most of the time ;)

It all fits neatly into a 16x22x6 inch box plus a medium cooler. Throw it under your sleeping platform, bring plenty of water and you're on your way!
